TILAPIA AND QUINOA WITH CUCUMBERS AND FETA
I was nervous about this one because the only fish I’ve ever made was tuna from a can. Jon commented that we never eat fish, and since I started this project it would be neat to try it out.

ZUCCHINI WITH LEMON AND THYME
I thought this side would go well with fish, since both require lemon. I might be totally incorrect in my reasoning, but it worked for me. The thing that didn’t work was I didn’t cut the zucchini into small enough chunks, so it took longer than 4 minutes to cook, which ended up with me overcooking it. Chicken with Sweet Potatoes and Cauliflower
I chose this recipe because of the sweet potatoes and cauliflower alone. I’m digging vegetable sides right now because in the past, on the rare occasions that I did actually cook, vegetables were frozen in a bag. That’s if I felt like making any vegetables at all. And, if you think about it, that’s kind of pathetic, because frozen vegetables take about 5 minutes.
